Light is projected through a horizontal polarized filter, so all light that is vibrating horizontally comes through.  The liquid crystals are switched off, and twist 90 degrees as light travels through them.  Light waves moving through horizontally are rotated by this to emerge vibrating vertically.  The final polarizing filter is vertical, and since the light is vibrating vertically now, it emerges and lights up the pixel.
